When I discovered the Village Harvest Origins Collection I was very excited to have access to a variety of delicious rice side dishes that take only 90 seconds to prepare! I chose the Village Harvest Lemon Rice from India to accompany my salmon dish the other night and it was a HIT! The Lemon Rice has a great texture and delicious tart lemony flavor and a dash of turmeric. The lovely yellow color added a pop to our plates which was super appetizing.
The first time I had Baked Salmon with Dill Sauce was at one of my favorite local restaurants and it became one of my favorite meals, so I tried to emulate it as best as I could! The salmon was simply marinated in lemon, butter and garlic seasoning, and then baked in the oven. I added a quick dill sauce (see recipe below) and whipped up the Village Harvest Lemon Rice in no time! I love that we were able to have an ethnically inspired dinner that was bursting with flavor, right in our own home. Add to that, the Lemon Rice is wholesome, organic and 100% whole grain as well as gluten-free and non-GMO. It is a dish I can easily get behind to serve my growing my family on a regular basis.
I am looking forward to trying the other 4 varieties of Village Harvest sides as well. Since we love ethnic food, I am sure the Thai varieties of Coconut Turmeric and Thai Green Curry brown jasmine rice mixes will inspire some delicious meals, and the other flavors from India include Basmati & Lentil and Tikka Masala ( yum!). All of the varieties are created from authentic recipes from their origin countries, that have been perfected for flavor, quality and ease of preparation (just 90 seconds in the microwave!) for your table.
