Closing in on the end of my series of protein-laden breakfast options just as summer is beginning! With the kids at home, I’ve been using each of these recipes so I can fill their tummies and know they are getting a healthy start to their day. We’ll be having our share of trips to the donut shop just for sake of fun summer memories, but for the most part we’ll be taking advantage of these easy, protein-rich breakfast recipes which are great for supporting busy brains throughout the day whether at school or during summer activities like camp, library time or just playing in the yard.

Breakfast burritos are a great go-to choice for an easy protein-rich breakfast to go for busy households like ours. They are super tasty, easy to hold (and travel) and can even be made in batches ahead of time and frozen, then popped in the microwave for those crazy mornings when you’re running out the door! I also love that there are so many options and you can pretty much please everyone by having a few ingredients on hand!
Here are three great versions that require only a few ingredients. You can gather everything you need and make a big batch of these to freeze for later, or you can make these recipes one at a time and enjoy on the daily. Of course, you can mix and match as your taste dictates or add other things that might be hiding in your fridge. We like to mix it up with tortillas, sometimes using spinach, sometimes using whole wheat flour, or fiber-rich, whatever other “flavor” you can find. My go-to wraps are the Ole Mexican Xtreme Wellness brand.
Sausage and Egg is my boys’ favorite. Simply brown breakfast sausage in a pan, crumble and then quickly saute sweet peppers while your sausage is browning. Combine with scrambled eggs and wrap in a tortilla for a warm, filling breakfast.
Bacon and Cheese is a big hit with the whole family. I pop my bacon in our convection oven on 350 degrees and let is get good and crispy, then I crumble. Add to scrambled eggs and sprinkle with your favorite grated cheese. Wrap in your choice of tortilla and voila! Another easy, tasty burrito option.
If you’re vegetarian, or just want to skip the meat, you can whip up my personal favorite version which is scrambled egg with diced fresh tomatoes, fresh spinach, and mushrooms. YUM! This is extra tasty during the summer months when you can get your hands on delicious farmer’s market tomatoes and the spinach packs a powerful punch of not only protein but iron as well.
