We love pancakes at our house. It’s a favorite breakfast for sure. I set out on a mission to find a recipe for fluffy, delicious protein pancakes that I could use as an alternative on school days. As we’ve mentioned before, protein is an important element for helping kids stay focused and learn better at school. While I like traditional pancakes for special occasions and breakfast on the weekend, I love these easy protein pancakes for during the week.

As I’ve researched natural ways to help my energetic child focus at school, I’ve learned the importance of protein in the mornings, so I’m sharing this easy protein pancakes recipe to help power your child’s day. I try to give my kids some sort of protein, whether it be in an egg recipe, breakfast meat, or using a packet of the Plexus P96 Vanilla whey protein.
As I’ve mentioned before, I like to add a packet of the Plexus P96 to a lot of recipes like muffins, and today I’m sharing this Gluten Free Protein Pancake Recipe with sugar-free syrup. I’ve made these a couple of different ways, and I’ve settled on this recipe as my favorite. They turned out light and fluffy, with just a slight hint of vanilla. Served with fresh fruit, they are really so good and such a great healthy option for busy mornings! I just dumped all the ingredients in my Ninja mixer and poured them on the grill.
Smother them with your favorite fruit and sugar-free syrup and you have a nearly guilt-free breakfast option! My kids ate these up and while they noticed a difference from the traditional recipe, they loved them. I now have another great protein-packed recipe for busy mornings that my kids won’t complain about. It’s a win-win for sure!
