French Toast happens to be my actual favorite breakfast item…well that and biscuits and gravy, and eggs benedict. I guess I have a couple of favorites, and really I love all breakfast food and I’m not sure why we don’t eat it for every meal! But as I’m trying to reduce sugar in our home and provide more healthy meals, I excited to share this recipe for French Toast Roll Ups.

There are several ways to enjoy these. For my family, since I wanted to add protein and reduce sugar, I used whole wheat bread, creamy almond butter (as opposed to peanut butter), unsweetened almond milk (instead of cows milk), and a light topping of cinnamon and sugar. I used a tablespoon of sugar for this entire batch of French Toast Roll Ups, rather than 1/3-1/2 cup which some recipes call for.
