With Spring in our midst and Easter coming soon, I’ve been wanting to create some colorful, light dessert recipes. It’s time to put the cold weather behind us and say goodbye to Winter! And nothing screams Spring more than a sweet, colorful dessert. We will have several family gatherings over the next few weeks, and I will definitely be serving this No Bake Rainbow Cheesecake.
Springtime is my absolute favorite season. My Cherry Blossom tree blooms and my purple Wisteria hangs over my hammock in the backyard and produces such a lovely aroma. I love sitting outside watching my kids play in the yard and we have several fun traditions. We attend a local Dafadil Festival and let the kids run through the fields of flowers. For the past eight years, we have hosted our neighborhood Easter Egg Hunt and the kids love racing through the grass scouting for candy-filled eggs. We also gather with our extended family for a big Easter celebration. Afterward, a hot cup of coffee with Nestlé® Coffee-mate® and a yummy dessert always hits the spot.

Oh my, it has taken my coffee to another level! I didn’t think I could love coffee more!
Ok back to this No Bake Rainbow Cheesecake. Have you ever eaten a dessert, and needed total quiet in the room so you could fully enjoy it? Or have you ever hid in your pantry or your closet because your dessert was so good that there was no way you were sharing? Surely it’s not just me. Someone please tell me you’ve done this before! I couldn’t really say if this dessert made me sneak off to the closet. All I know is my kids noticed one was missing and I blamed it on the dog.
This dessert has several special ingredients that make it, well, oh so special: the strawberry cheesecake creamer, cream cheese, and a buttery graham cracker crust. You put those things together, along with a few other ingredients and you get a sweet, fluffy, creamy, make-you-want-to-hide-in-the-closet dessert. Add a little food coloring, a dash of sprinkles, and whip up some homemade whip cream, and you’ll suddenly look like a master confectioner.
This No Bake Rainbow Cheesecake was incredibly easy to make, and the best part? It’s NO bake! Pull out your muffin mold, hand mixer, and a few bowls, and 30 minutes later you’ll have a dessert sitting in the freezer just waiting for your loved ones to devour. I made this with a silicone jumbo muffin mold which is a perfect serving size for adults, but if you wanted to go a little smaller for a kid-sized dessert portion, you would use the regular size silicone muffin mold, but the key here is to use a silicone mold so you can easily pop out the mini cheesecakes without disturbing their shape.
